With increasing prices on good quality food, none of us like to let anything go to waste. Food preservation is a great way to make your stock go further, as well as save the earth’s precious resources. Freeze drying offers a method than can extend the shelf life of a huge range of foods, so that you can consume them long after the initial purchase. This allows you to buy in bulk and get even better deals.
So how does freeze drying work for food preservation? First, the temperature of the product is lowered to below freezing, and then water is extracted in the form of vapour through the application of a high-pressure vacuum. This vapour is collected and removed, then the product is slowly heated again so all remaining vapour can be sucked out. The end result can be stored for a long time, and becomes perfect for use again whenever it is re-hydrated.
Freeze drying is one of the best methods of food preservation available. It means that foods and liquids can be dried at low temperatures with no damage to their physical structure! Once freeze-dried, foods don’t need to be refrigerated or kept in chemicals in order to last a long time. When you’re ready to use them again, simply reconstitute them by adding water! Unlike drying through high-temperatures, freeze drying doesn’t make any chemical or physical changes to the product. It’s food preservation at its purest!
Foods that are suitable for freeze drying include coffee, vegetables, meat, fruit and juice, eggs, dairy, fish and seafood. For fruit and veggies, small items freeze dry much better than large ones- however it’s possible to cut them up and freeze dry them that way. Same goes with meat. It’s also essential to remember to cook your meat and seafood before freeze drying!
When it comes to food preservation, freeze drying is a fantastic option that leaves foods tasting great and in remarkably similar condition to before they were dried. This allows you to keep them for much longer, which is a great investment if your business requires large quantities of seasonable food. It also helps ensure nothing goes to waste- as it did when it was first used in the Second World War. It’s a technology that has continued to be developed and improved to this very day.
